Description: Milleens is one of the oldest farmhouse cheeses from Ireland. It was first made in 1974 at Beara Peninsula, Co. Cork, South West Ireland. Milleens is soft, washed-rind cheese made from the pasteurised whole milk of Friesian cows. This complex and delicate cheese has an orange-brown colored rind, which is slightly sticky. It continues to ripen and soften for up to three months after being made. When young, the paste of Milleens is smooth, buttery and slightly lactic in taste. A fully matured Milleens has complex flavors. The cheese pairs well with dessert wines, dry white wines.
