When young, this hearty, stinky cheese has a fairly firm and somewhat brittle texture that softens and becomes supple with age. With its intense, beefy, earthy flavors and pungent reddish, washed rind, Mont St. Francis is definitely not for the faint hearted! Because of its extreme flavor profiles, Mont St. Francis pairs well with bourbon or fruity, fortified wines, bitter beers and sweet condiments.
