Description: Montasio is a creamery, unpasteurised cow’s milk cheese originating from the Friuli Venezia Giulia and Veneto provinces of Italy. Awarded (PDO) protected designation of origin in 1986, this cheese is sold fresh, middle and aged depending on the aging time of 60 days up to 1 year. It was originally a monastery cheese but today it is produced only in a specific region of Italy following age-old traditional methods. Semi aged Montasio or Montasio mezzano, which has been aged between 5 and 12 months, acquires a unique, full-bodied savory flavor. The pate is firmer and a little crumblier with the color now turning to straw yellow. Its aroma is heady, echoing the true nature of the cheese. The cheese works well as a table or grating cheese and can be paired with a Pinot Grigio, a Merlot or Sauvignon Blanc.
