Description: Barberey is soft textured cheese with a natural rind. Named after the village of Barberey near Troyes town, it is manufactured in the Champagne-Ardenne region of France. Made from the cow's skimmed milk, this cheese is coated in ash, and it contains 20 to 30% fat. The wheel comes in two forms, natural and powdered with sweet herbs. It is a lactic hand moulded curd, allowing its smooth, soft consistency and freshness. Its mild and creamy nature goes well with full-bodied red wines. Also famous as Fromage de Troyes and Troyes Cendré. ( in English, Ash Trojan or Troyes cheese)
