Description: Ocooch Mountain is a mountain-style, raw milk cheese, named after the Ocooch Mountains, a place name for the Western Upland area of Wisconsin. It is aged for 3-4 months, during which it is regular washed to develop a dense, nutty, slightly grainy cheese with a natural rind. The cheese is a bit like Parmesan but made with sheep’s milk. It has won many awards at the American Cheese Society competition.
