Description: St Tola Log is a goat's cheese made by Siobhán Nà Gháirbhit and her team at Inagh Farmhouse cheese n Co Clare, on the West Atlantic coast of Ireland. The cheese is named after the local patron saint, St Tola. St Tola is renowned for its soft light smooth fine-grained creamy texture but with a number of complex sub flavors. It is available in both young and mature versions where the flavor and texture both change as the cheese ages. Young St Tola is quite fragile structured with a fresher cleaner and creamy flavor. As it matures, the cheese acquires a firmer texture and pronounced, sweet and floral with honey undertones with a distinctive loose, wrinkled golden geotrichum rind. The cheese can be used in various recipes but it also makes a really good cheeseboard. A 120g slice of Mature St Tola is available as 'St Tola Original'.
