Description: Toscanello (Pecorino Toscano) is a classic Italian cheese produced within the protected and specific region (PDO/DOP). Made using sheep’s milk, Pecorino Toscano is an artisanal cheese created by farmers located in Tuscany and nearby districts of Umbria and Lazio. Full cream and pasteurised milk is used to make this cheese. The cheese is matured in a cellar for a period varying from three and six months; during the maturation process, it develops an identifiable texture and flavor. When fresh, Pecorino Toscano is mild and creamy with leafy overtones. The matured cheese is hard and used for grating. The delicate flavor of a young pecorino Toscano is used in salad-based starters. The matured version goes well with honey or jam, fresh vegetables or fruits (pears and figs).
