Description: The Italian cheese Bra (Bra Duro DOP) comes from the town of Bra in Cuneo in the region of Piemonte, Italy. Though the production of this cheese now takes place in many different regions, the one that is produced within the province of Cuneo is considered to be the most authentic. It is made from pasteurised cow's milk. The cheese with small eyes has off-white or beige rind. The interior of Bra cheese ranges from pale-yellow to dark yellow-orange. The cheese comes in three different types namely Bra Tenero, Bra Duro and Bra d’alpeggio. Bra Tenero is a tender or soft version that is aged up to 45 days, Bra Duro is a hard version that is aged for 5-6 months. Bra d’alpeggio, the third type is made only from cow's milk that grazes in mountain pastures from June to October.
