This historic cheese dates back to the late 7th century when the region was known as the Most Serene Republic of Venice. Condio, meaning 'seasoned', is a cheese aged for minimum three months. It is rubbed with spices, such asĀ oregano, basil, mint thyme, marjoram, sesame and parsley, to create a spicy-flavored cheese.
