Description: Flory's Truckle is a Cheddar-style cheese named after cylinder shaped truckles in which old world Cheddars were moulded. Milton Creamery with help from Flory Family of Jamesport, Missouri develop this aged clothbound cheddar. Tim Flory and his family make the cheese from raw milk of their own Jersey cows, while Milton continues to age the cheese in their specially designed aging facility. The cheese ages covered in cheesecloth for a year, during which it is coated with lard to minimize mould penetration. The cloth lets the cheese develop a dry, crumbly texture with a fine peppery aroma and a rich grassy flavor.
