Alternative Spellings: Fortsonia Reserve, Twisted Fortsonia
Description: Inspired by Comté and Gruyère and named after the local community, Fortsonia is an Alpine-style cheese made by Tim and Liz Young of Nature's Harmony, Georgia. The cheese is offered at three different ages: - Standard Fortsonia, aged 6 months or less - Fortsonia Reserve, aged 10 months or more, and - Twisted Fortsonia, aged for a minimum of 4 months during which it is hand bathed in late harvest Scuppernong wine several times a week. As the cheese strengthens with aging, Fortsonia becomes firm and dense with sweet and nutty flavors. Special mention should be given to notes of caramel and hazelnut. Chardonnay, Sauvignon Blanc, Syrah, or Zinfandel makes a great match with Fortsonia. Witbier spiced with coriander or orange, or a Geuze-style Lambic also pair well with the cheese.
